The Best Jambalaya Recipe – Creole

For many people who have never heard of or tried jambalaya before, this is a very tasty local cuisine that is known to have originated in Louisiana in the United States. It is a simple and very delicious rice dish that has three popular variants:

• The Cajun Jambalaya,

• The Creole Jambalaya, and

• The white Jambalaya

For the ultimate jambalaya recipe, here is a traditional Creole Jambalaya recipe that is sure to tickle your taste buds.

Ingredients:

• 2 and ½ cups of rice, the long grain ones will do

• Approximately 142 grams of chicken, cut into approximately 2.5 cm squares. cubes

• About 85 grams of pork ribs, cut them the same size as the chicken. Smoked pork doesn’t work!

• About 142 grams of ham cubes

• About 170 grams of Andouille sausage is recommended, but can be substituted if not available on the local market.

• About 343 grams of raw shell-on shrimp

• A 0.35l of tomato crushed by hand, essential!

• 1 and ½ cups finely chopped onions

• 1 cup finely chopped celery

• 1/2 cup finely chopped red bell pepper

• 1 cup finely chopped green bell pepper

• 2 cups of chicken broth

• 6 garlic cloves, crushed or pressed

• Clam or vegetable juice as needed – No water!

• ½ tablespoon of white, red and black bell peppers

• 1 tablespoon pale dry sherry, if desired

• ¼ teaspoon of saffron crushed with your fingers

• ¼ teaspoon of monosodium glutamate

• 1 and ½ teaspoons of Hungarian hot paprika

• ¼ teaspoon of thyme

• 1 small bay leaf

• 3 tablespoons of Spanish olive oil, essential!

cooking instructions

1. Heat the olive oil in the cast iron pot or dutch oven

2. Add bell peppers, onion, garlic and celery and stir, cook over high heat until ingredients are translucent.

3. Add the chicken and pork and continue to stir until they turn white.

4. Add the ham and sausage and stir for about 3 minutes.

5. Add the tomatoes and stir for 5 minutes

6. Lower the heat to medium and add the chicken broth and stir.

7. Using the same heat, add all other seasonings except sherry in any order and stir. Let cook about 20 minutes.

8. Add the rice, cover the pot and cook for about 30 minutes

9. Add the prawns and sherry

10. If necessary or if rice is undercooked, add vegetable or clam juice and stir well. Let cook for another 5 to 10 minutes.

11. Turn off the heat and bring to a simmer and serve
